Roast rava to light brown and keep aside.

Heat oil in a pan on a low flame. When oil gets warm, add mustard seeds. Wait for mustard seeds to splutter. Add cumin seeds, urad dal, chana dal. When they turn light brown, add asafoetida. Then add chopped onion, turmeric powder, green chilies, fresh ginger.

Once the onions turn translucent, add vegetables, 3 cups of water and salt. When the water starts to boil, add ½ tbsp lime juice, sugar and the roasted rava. Stir continuously until the water is absorbed and the rava is cooked. Now the uppittu is ready. Enjoy!
